Meet Founder &
Executive Chef
Müdahir’s culinary journey began at a young age in the kitchen of Dionysos Village Hotel on the Bozburun Peninsula. It was there that he had the opportunity to work alongside one of Türkiye’s renowned chefs, Didem Şenol, marking an important step in a career that would later extend to Istanbul. Alongside working in some of Istanbul’s prestigious restaurants, he further refined his culinary vision through international experience gained in New York.
Despite the years of experience he accumulated, his heart always remained in the Aegean. His deep connection to his roots and to nature eventually brought him back to the coast, where he went on to lead several successful gastronomic projects.
Today, as the chef and owner of Pedesa Restaurant in Kumlubük, Müdahir invites his guests on a unique culinary journey through the innovative touches he brings to modern Turkish cuisine.

Meets the Table
Pedesa Restaurant takes its name from the ancient city of Pedasa Ancient City, one of the most important settlements of the Lelegians—an early civilization that once thrived across this region thousands of years ago.
Perched on high, rugged hills, Pedesa was a place of strength, resilience, and connection. Its name is believed to be rooted in ancient Anatolian language, possibly meaning “a place where one sets foot” or “a strategic foothold.” It symbolized both grounding and gathering—a meeting point for travelers, communities, and stories.
At Pedesa Restaurant, we carry this spirit into the present. Just as the Lelegians built their world on solid stone and deep roots, we have created a space grounded in authenticity, nature, and timeless hospitality. Here, the rich heritage of the land meets the simplicity and generosity of the Aegean table.
Pedesa is more than a name—it is a tribute to the past, a connection to the land beneath us, and an invitation to experience something enduring.
